RECOMMENDATION: KEEP A TEMPERATURE LOG THAT RECORDS THE INTERIOR TEMPERATURE OF COOLING OR HEATING FACILITIES TO ENSURE THAT POTENTIALLY HAZARDOUS FOODS ARE BEING KEPT AT TEMPERATURE THAT MEET REGULATORY REQUIREMENTS.

*3  Observed the temperature of the Turbo Air condiment cooler to be too high--45-50 F. No temperature log was available. Several food items were thrown out--2 cheese bags (8LBS), 1 bottle of sour cream (20 OZ), and 20 Eggs. Air circulation within the cooler was blocked, resulting in a warmer interior temperature. Provide for all cold potentially hazardous foods to be held at 41°F or below at all times except during necessary periods of preparation. 750.140 NOTE: All potentially hazardous foods that were found in the danger zone were thrown out. *41  Weiman stainless steel clean was found stored along side condiment containers--this was located next to the 2 'Panasonic' microwaves. Also, the small spot on the ceiling, above the 3-compartment sink is in poor repair--paint peeling and its becoming a hole in the ceiling.
